Crafted as a tribute to the Kansai region, this sake is made exclusively from Yamada Nishiki grown in Kansai to create “DASSAI Junmai Daiginjo 23.” During the pressing process, only the“Nakadori” ̶ the most fragrant portion with a rounded sweetness ̶ is selected. Presented in a wooden box made from Yoshino cedar from Kansai, this is a special Dassai 23% available exclusively at Kansai International Airport KIX DUTY FREE.

日本酒中的“中取（Nakadori）”，是指在酒醪压榨过程中，介于最先流出的“荒走（Arabashiri）”与最后加压压榨出的“责（Seme）”之间所取得的中段酒液。
中取是压榨过程中风味最均衡的部分，因此常被用于酿造高品质日本酒。
其特色是杂味较少，香气、鲜味与酸味协调平衡，口感顺滑且富有清透感。
