Wine is grapes, sake is rice. Nothing surpasses the ingredients. Yamada Nishiki was born in 1936 and turned 88 years old this year. The place where Yamada Nishiki was born is Kankai. This Daiginjo uses the rice grown in Kankai, the place where Yamada-Nishiki, the king of sake rice, originated.
A big turning point in our more than 100-year history was encounter with Ginjo. We have been able to continue brewing sake until now by studying techniques to win awards at the National New Sake Competition and specializing in Daiginjo. Even though times change, the essence remains the same, and Tatsuriki continues to brew the ideal of its origins. This is the Daiginjo of enforcement and origin.
It has won gold medals at the National New Sake Competition, The Wine Sake Awards, the IWC, and U.S. National Sake Appraisal. Having received equal recognition in various sake competitions with different judging methods, we can say that this Daiginjo must be great.
