■About Nakadori
“Nakadori” refers to the middle portion of sake collected during the pressing process. It is taken between the initial free-run portion called “Arabashiri” and the final portion called “Seme,” which is extracted under stronger pressure.
Nakadori sake is made using the most well-balanced portion obtained during pressing.
It is characterized by a smooth, refined, and crystal-clear flavor profile with minimal harshness, offering excellent harmony between aroma, umami, and acidity.
