Valpolicella area is very well known for red wines with great personality. "Vallis polis cellae" means the "valley of many cellars" and this is a clear sign that wine making has ancient origins here. Ripasso Valpollicella is procuced by indigenous vines such as Corvine, Corvinone e Rondinella and it is subjected to a double fermentation. Later Ripasso Valpollicella is aged in French oak barrels. During this process the wine becomes more complex, the colour stabilizes and the bouquet enriches. It can be sold only after two years from harvesting. Ripasso is considered as the younger and lighter version of Amarone: - the quality reminds that of Amarone, with a lighter structure - grapes are refermented in the pomace of Amarone (*Ri-passo) It goes particularly well with first courses based on tasty sauces like pasta with ragù, meat ravioli, red meat (roasts, grilled meat and game) and seasoned cheeses.
