DASSAI 23 is a sake that symbolizes the DASSAI brand. As is name suggests, it is made from Yamada Nishiki sake rice, polished down to 23%. It goes without saying that constant technical trial and errors is conducted to consistently pursue a taste that lives p to its name of DASSAI 23.
One such aspect is the Pressing process of sake making.

At DASSAI, when pressing the sake mash (Moromi) that has undergone approximately 35 days of fermentation, we minimize the pressing period and pressure as much as possible, which is way below the standard in the sake brewing industry.

After pressing, the remined sake lees that contains alcohol of at least 8%. Although applying more pressure and time would yield more sake economically, the last-pressed ‘squeezed’ or the Tail part of sake would contain unwanted flavors and aromas that do not align with what DASSAI seeks.

DASSAI 23 Nakadori is a more luxurious sake that further pursues the goodness that can be brought out from the pressing process.

Of the sake DASSAI 23 extracted from the Yabuta pressing, we extract only the most fragrant, round, sweet, and well-balanced, clean sake from the Heart part.
