It embodies the spirit of ginjo sake brewing pioneered by the fifth-generation master brewer and carried forward by the current sixth-generation master brewer, who wishes to share the excellence of Japanese sake with the world.
To cultivate yeast fermentation as precisely as possible, production is strictly limited to small batches. All specifications undergo low-temperature, long-term fermentation using the ginjo brewing method.
Particular attention to the treatment of raw materials involves washing and soaking all white rice, whether koji rice or hanging rice, in batches of 10 kilograms each, following a limited water absorption method to achieve optimal brewing.
