This is a limited-edition sake crafted at the Kowagura, our brewing facility known for delivering the highest quality standards in Japanese sake production. This premium sake is made using a special A-grade Yamada Nishiki sake rice from Hyogo Prefecture’s Kuchikagawa region, which is carefully polished down to an impressive 25% of the grain remaining. The sake is then brewed in small batches including a meticulous koji-making process that uses traditional kojibuta (koji trays).　Every step of the production process is handled with the utmost precision and care.
Through long-term, low-temperature aging, the sake develops a mellow character, complemented by a balance of lightness and depth, resulting in a refined, multi-dimensional flavor profile.
