Nada (in Hyogo Prefecture) and Fushimi (in Kyoto Prefecture),
both located in the Kansai region, are famous as two of the
three great sake-producing areas of Japan. Based on the
characteristics of the sake they produce, which result from the
mineral content of water used and other aspects of the
sake-brewing process, sake from Fushimi traditionally has been
known as "onnazake" (women's sake), while sake from Nada has
been known as "otokozake" (men's sake).
Women's sake from Fushimi
  • Known as fushimizu, sake from Fushimi (in Kyoto
    Prefecture) is made with medium-hard water, which
    has comparatively low mineral content.
  • As a result of the gradual fermentation process, any
    hint of roughness is removed, yielding a smooth,
    fine-textured, low-acid sake.
  • This type of sake was refined to suit Kyoto-style
    cuisine, which derived from the style cuisine served at
    court.

    refreshingly dry sake characterized by full body
    and crisp mouthfeel.
  • The type developed as "sake to send to Edo" since it
    suited the taste of that city's residents.
